Radish and pea salad with tomato and mint

Chickpeas, black-eyed peas, or lady peas could also be used in this salad.

1 1/2 cups fresh pink-eyed peas

3 tablespoons fresh lemon juice

1 tablespoon rice wine vinegar

1 tablespoon olive oil

2 cups grape or cherry tomatoes, halved

1 cup thinly sliced radishes (about 8)

Baked Radish Chips

Makes 1 serving





10 radishes

1 tsp chili powder

1/2 tsp garlic salt

1/2 tsp paprika


1.Thinly slice radishes

2.Steam in microwave for 5 minutes

3.Put in bowl with spices; stir

4.Bake at 350 degrees for 10 minutes, flip the chips, and bake for another 10 minutes

Fried Zucchini w/Tomatoes and Cheese

Feel free to use Mozzarella cheese in place of the fontina cheese in this recipe. This is a delicious side dish to serve with chicken or meat main dishes.

Fried Zucchini Coins

Dry-Fried Green Beans

1 lb fresh green beans

1 teaspoon dried chili pepper flakes

1/4 cup walnuts, coarsely chopped

2 tablespoons oil

salt and pepper, to taste

Oven Glazed Carrots

1/10 teaspoon pepper

1/2 teaspoon salt

2 tablespoons brown sugar

2 tablespoons butter

8 medium scraped carrot


Prep: 10 min Cook: 90 min



1 Cut carrots into strips 1/4 inch thick and about 1 1/2 inches long.

2 Place in a buttered casserole dish and sprinkle with salt and pepper.

3 Dot with brown sugar and butter.

4 Cover.

5 Bake at 350 degrees for 1 1/2 hours.
